Wash and dry all produce.

Massage @microwavable grain blend{2%pouches} in package to separate grains; partially open package. Microwave until warmed through ~{90%seconds}.

Transfer grain blend to a #large bowl{}. Add @spinach{10%oz}, @sun-dried tomatoes{½%cup}, and sliced @scallions{4%unit}. In a #small bowl{}, whisk together @olive oil{2%tbsp}, @dijon mustard{1%tbsp}, @honey{1%tbsp}, @sugar{1%tsp}, @lemon{1%unit}(juiced), @salt{½%tsp}, and @black pepper{¼%tsp} until combined. Pour dressing over grain mixture and toss to coat.

Divide salad between shallow bowls. Garnish with scallion greens and @cashews{2%tbsp}. Serve.
